  1. 1. Peel the onion, garlic, and carrot. Cut them into very small cubes.
  2. 2. Wash the celery and remove tough fibers. Cut it into small cubes as well.
  3. 3. Heat the oil in a pot. Sauté the onion and garlic until they become translucent.
  4. 4. Add the chopped vegetables (carrot and celery). Let them sweat for a short time.
  5. 5. Pour the tomatoes over the vegetables. Season with salt, pepper, and oregano.
  6. 6. Let the sauce simmer on medium heat for 10 to 15 minutes.
  7. 7. Soak the bread roll in lukewarm water.
  8. 8. Squeeze the bread well and mix it with the minced meat, egg, mustard, and parsley.
  9. 9. Season the meat mixture with salt and pepper.
  10. 10. Form small balls from the mixture.
  11. 11. Fry the balls in a pan with hot clarified butter until golden brown on all sides.
  12. 12. Add the browned meatballs to the tomato sauce.
  13. 13. Taste the sauce with the meatballs and adjust seasoning if needed.
  14. 14. Cook the pasta in boiling salted water until al dente (firm to the bite).
