  1. 1. Boil water in a large pot and add some salt.
  2. 2. Add the pasta to the boiling water and cook until al dente.
  3. 3. Blanch the tomatoes briefly in boiling water.
  4. 4. Remove the tomatoes immediately and plunge them into cold water to shock them.
  5. 5. Peel the skin off the tomatoes.
  6. 6. Cut the tomatoes into quarters and remove the core.
  7. 7. Dice the tomato flesh into small cubes.
  8. 8. Drain the mozzarella.
  9. 9. Cut the mozzarella into small cubes as well.
  10. 10. Wash the parsley and the basil.
  11. 11. Shake the herbs dry.
  12. 12. Pluck the leaves off the stems.
  13. 13. Set aside a few basil leaves for decoration.
  14. 14. Finely chop the rest of the basil together with the parsley.
  15. 15. Mix the chopped herbs with oil, lemon juice, salt, and pepper.
  16. 16. Season the dressing with salt and pepper to taste.
  17. 17. Add the tomato cubes and mozzarella cubes to a bowl.
  18. 18. Add the drained pasta to the tomato and mozzarella mixture.
  19. 19. Toss everything well with the herb dressing.
  20. 20. Serve the pasta in small bowls.
  21. 21. Garnish the dishes with the reserved basil leaves.
