🍝 Fresh Pasta with Mozzarella and Tomato Dressing

Ingredients
- 400 g Spaghetti
- Salt
- 6 ripe Tomatoes
- 2 balls Mozzarella (á 125 g)
- 0.5 bunch Parsley
- 0.5 bunch Basil
- 4 tbsp Olive oil
- 1 tbsp Lemon juice
- Pepper (from the mill)
Instructions
- 1. Boil water in a large pot and add some salt.
- 2. Add the pasta to the boiling water and cook until al dente.
- 3. Blanch the tomatoes briefly in boiling water.
- 4. Remove the tomatoes immediately and plunge them into cold water to shock them.
- 5. Peel the skin off the tomatoes.
- 6. Cut the tomatoes into quarters and remove the core.
- 7. Dice the tomato flesh into small cubes.
- 8. Drain the mozzarella.
- 9. Cut the mozzarella into small cubes as well.
- 10. Wash the parsley and the basil.
- 11. Shake the herbs dry.
- 12. Pluck the leaves off the stems.
- 13. Set aside a few basil leaves for decoration.
- 14. Finely chop the rest of the basil together with the parsley.
- 15. Mix the chopped herbs with oil, lemon juice, salt, and pepper.
- 16. Season the dressing with salt and pepper to taste.
- 17. Add the tomato cubes and mozzarella cubes to a bowl.
- 18. Add the drained pasta to the tomato and mozzarella mixture.
- 19. Toss everything well with the herb dressing.
- 20. Serve the pasta in small bowls.
- 21. Garnish the dishes with the reserved basil leaves.
