🍝 Quick Pasta with Salmon and Leek

Ingredients
- 1 stalk leek
- 1 clove garlic
- 500 g salmon fillet (kitchen-ready, skinless)
- 2 tbsp olive oil
- 100 ml dry white wine
- 75 ml fish stock
- 400 g penne
- salt
- pepper (from the mill)
- 1 splash lemon juice
- 60 g freshly grated parmesan
- 1 untreated lemon (in wedges)
Instructions
- 1. Wash the leek thoroughly and cut it lengthwise.
- 2. Shake off excess water, remove the green tips, and slice the leek into thin rings.
- 3. Peel the garlic clove and press it finely.
- 4. Wash the salmon, pat it dry with a kitchen towel, and cut it into 1.5 cm thick slices.
- 5. Heat oil in a large pan and fry the salmon slices briefly on both sides.
- 6. Add the leek rings and garlic to the pan and sweat them briefly.
- 7. Deglaze the pan with wine and stir.
- 8. Pour in the fish stock and let the sauce simmer on medium heat for about 10 minutes.
- 9. Cook the pasta in a pot of boiling salted water until al dente (firm to the bite).
- 10. Break the cooked salmon in the sauce into large chunks.
- 11. Drain the pasta and add it directly to the pan with the sauce.
- 12. Toss everything well so the pasta absorbs the sauce.
- 13. Season the dish to taste with salt, pepper, and a splash of lemon juice.
- 14. Serve the pasta in bowls, sprinkle with grated Parmesan, and garnish with lemon wedges if desired.
