  1. 1. Wash the leek thoroughly and cut it lengthwise.
  2. 2. Shake off excess water, remove the green tips, and slice the leek into thin rings.
  3. 3. Peel the garlic clove and press it finely.
  4. 4. Wash the salmon, pat it dry with a kitchen towel, and cut it into 1.5 cm thick slices.
  5. 5. Heat oil in a large pan and fry the salmon slices briefly on both sides.
  6. 6. Add the leek rings and garlic to the pan and sweat them briefly.
  7. 7. Deglaze the pan with wine and stir.
  8. 8. Pour in the fish stock and let the sauce simmer on medium heat for about 10 minutes.
  9. 9. Cook the pasta in a pot of boiling salted water until al dente (firm to the bite).
  10. 10. Break the cooked salmon in the sauce into large chunks.
  11. 11. Drain the pasta and add it directly to the pan with the sauce.
  12. 12. Toss everything well so the pasta absorbs the sauce.
  13. 13. Season the dish to taste with salt, pepper, and a splash of lemon juice.
  14. 14. Serve the pasta in bowls, sprinkle with grated Parmesan, and garnish with lemon wedges if desired.
