🍝 Tagliatelle with creamy herb ricotta sauce

Ingredients
- 400 g Tagliatelle
- 250 g Ricotta
- 4 tbsp finely chopped herbs (colorful mix)
- 2 tbsp Parmesan (freshly grated)
- Salt
- Pepper (freshly ground)
- Olive oil (extra virgin)
- Basil (for garnish)
Instructions
- 1. Bring a large pot of water to a boil and add plenty of salt.
- 2. Cook the tagliatelle in this salted water until they are al dente (firm to the bite).
- 3. Drain the pasta, but reserve exactly one cup of the pasta cooking water.
- 4. Place the ricotta in a bowl.
- 5. Add 4 to 5 tablespoons of the reserved pasta cooking water.
- 6. Add the fresh herbs to the bowl.
- 7. Add 2 tablespoons of olive oil.
- 8. Season the mixture with salt and pepper to taste.
- 9. Add the grated Parmesan cheese.
- 10. Stir everything well until a creamy sauce forms.
- 11. If the sauce is too thick, add a little more pasta cooking water until it becomes creamy.
- 12. Divide the cooked tagliatelle among the plates.
- 13. Spoon the ricotta herb sauce over the pasta.
- 14. Garnish the dish with fresh basil leaves.
- 15. Serve the pasta immediately while warm.
