🍝 Chicken Pasta with Fresh Lime Herb Dressing

Ingredients
- 2 sprigs basil
- 0.25 bunch parsley
- 3 sprigs thyme
- 0.25 bunch chives
- 2 cloves garlic
- 3 limes
- 500 g tagliatelle
- salt
- 4 chicken breast fillets (á 150 g)
- pepper (from the mill)
- 2 tbsp vegetable oil
- 30 g butter
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the herbs and shake off excess water.
- 3. Pluck the leaves from the stems and chop them finely.
- 4. Peel the garlic and chop it finely as well.
- 5. Grate the peel of the limes to get the zest.
- 6. Squeeze the limes to extract the juice.
- 7. Cook the pasta in boiling salted water for 10 to 15 minutes until al dente.
- 8. Wash the chicken breasts and pat them dry with a kitchen towel.
- 9. Season the chicken with salt and pepper.
- 10. Fry the chicken in a hot grill pan with oil for 3 to 4 minutes on each side.
- 11. Place the chicken in the preheated oven and finish cooking for 10 to 12 minutes.
- 12. Melt the butter in a separate pan.
- 13. Sauté the garlic for 1 to 2 minutes until translucent.
- 14. Add the chopped herbs to the pan.
- 15. Deglaze the mixture with the lime juice.
- 16. Season the sauce finally with salt and pepper.
- 17. Divide the cooked pasta among four pre-warmed plates.
- 18. Slice the chicken breasts and place them on top of the pasta.
- 19. Drizzle the dish with the lime herb sauce.
- 20. Garnish the pasta with the lime zest and serve.
