🍝 Pasta with Minced Meat, Carrot Sauce, and Onions

Ingredients
- 400 g Tagliatelle (or whole wheat tagliatelle if you like)
- 3 Carrots
- 0.5 Leek
- 250 g Turkey Minced Meat
- 100 ml Poultry Stock
- Olive Oil (cold pressed)
- 150 g Feta
- Salt
- Pepper (freshly ground)
- 0.5 tsp Chili Powder
Instructions
- 1. Peel the carrots and grate them finely.
- 2. Wash the leek and cut it into thin strips.
- 3. Heat 3 tablespoons of oil in a frying pan.
- 4. Sauté the grated carrots over medium heat, stirring frequently.
- 5. Add the sliced leek strips and sauté them briefly.
- 6. Add the minced meat and cook it while stirring until fully cooked.
- 7. Pour in the broth and bring the mixture to a boil.
- 8. Reduce the heat and let the sauce simmer for about 2 to 3 minutes.
- 9. Season the sauce with chili, pepper, and salt to taste.
- 10. Cook the pasta in plenty of salted water until al dente (firm to the bite) and drain.
- 11. Toss the drained pasta immediately with the contents of the pan.
- 12. Divide the pasta onto plates.
- 13. Crumble the feta cheese over the top.
- 14. Serve the dish immediately.
- 15. Optionally garnish with fresh arugula leaves.
