  1. 1. Peel the carrots and grate them finely.
  2. 2. Wash the leek and cut it into thin strips.
  3. 3. Heat 3 tablespoons of oil in a frying pan.
  4. 4. Sauté the grated carrots over medium heat, stirring frequently.
  5. 5. Add the sliced leek strips and sauté them briefly.
  6. 6. Add the minced meat and cook it while stirring until fully cooked.
  7. 7. Pour in the broth and bring the mixture to a boil.
  8. 8. Reduce the heat and let the sauce simmer for about 2 to 3 minutes.
  9. 9. Season the sauce with chili, pepper, and salt to taste.
  10. 10. Cook the pasta in plenty of salted water until al dente (firm to the bite) and drain.
  11. 11. Toss the drained pasta immediately with the contents of the pan.
  12. 12. Divide the pasta onto plates.
  13. 13. Crumble the feta cheese over the top.
  14. 14. Serve the dish immediately.
  15. 15. Optionally garnish with fresh arugula leaves.
