  1. 1. Strip the leaves from the kale stem.
  2. 2. Wash the kale thoroughly.
  3. 3. Let the vegetables drain.
  4. 4. Add the kale in batches to a large pot of boiling water.
  5. 5. Cook the kale for 2 to 3 minutes (this is called blanching).
  6. 6. Shock the kale immediately with cold water.
  7. 7. Let the vegetables drain again.
  8. 8. Squeeze the kale firmly to remove excess moisture.
  9. 9. Peel the onion.
  10. 10. Cut the onion into fine cubes.
  11. 11. Peel the garlic.
  12. 12. Finely chop the garlic.
  13. 13. Heat the olive oil in a large pot.
  14. 14. Add the onions and garlic to the hot oil.
  15. 15. Sauté the vegetables over medium heat.
  16. 16. Add the prepared kale.
  17. 17. Sauté the kale briefly.
  18. 18. Pour the beef stock over it.
  19. 19. Simmer the kale for about 30 minutes.
  20. 20. The liquid should be almost completely evaporated by the end.
  21. 21. Cook the pasta in plenty of salted water for approx. 8 minutes al dente.
  22. 22. Fry the Parma ham slices in 1 tsp olive oil for approx. 1 minute until crispy.
  23. 23. Drain the pasta.
  24. 24. Mix the pasta immediately with the kale.
  25. 25. Distribute the dish onto plates.
  26. 26. Sprinkle it generously with Parmesan.
  27. 27. Cover it with 1 to 2 slices of Parma ham each.
  28. 28. Serve the dish immediately.
