🍝 Creative Pasta with Kale and Parma Ham

Ingredients
- 800 g fresh kale
- 2 garlic cloves
- 1 onion
- 4 tbsp cold-pressed olive oil
- 350 ml beef stock
- 400 g penne
- 8 slices Parma ham
- 1 tsp olive oil
- salt
- pepper (from the mill)
- 100 g freshly grated Parmesan
Instructions
- 1. Strip the leaves from the kale stem.
- 2. Wash the kale thoroughly.
- 3. Let the vegetables drain.
- 4. Add the kale in batches to a large pot of boiling water.
- 5. Cook the kale for 2 to 3 minutes (this is called blanching).
- 6. Shock the kale immediately with cold water.
- 7. Let the vegetables drain again.
- 8. Squeeze the kale firmly to remove excess moisture.
- 9. Peel the onion.
- 10. Cut the onion into fine cubes.
- 11. Peel the garlic.
- 12. Finely chop the garlic.
- 13. Heat the olive oil in a large pot.
- 14. Add the onions and garlic to the hot oil.
- 15. Sauté the vegetables over medium heat.
- 16. Add the prepared kale.
- 17. Sauté the kale briefly.
- 18. Pour the beef stock over it.
- 19. Simmer the kale for about 30 minutes.
- 20. The liquid should be almost completely evaporated by the end.
- 21. Cook the pasta in plenty of salted water for approx. 8 minutes al dente.
- 22. Fry the Parma ham slices in 1 tsp olive oil for approx. 1 minute until crispy.
- 23. Drain the pasta.
- 24. Mix the pasta immediately with the kale.
- 25. Distribute the dish onto plates.
- 26. Sprinkle it generously with Parmesan.
- 27. Cover it with 1 to 2 slices of Parma ham each.
- 28. Serve the dish immediately.
