🍝 Spaghetti with Green Asparagus and Orange Zest

Ingredients
- 400 g Spaghetti
- Salt
- 1 untreated Orange
- 600 g green Asparagus
- 4 Spring Onions
- 3 tbsp Olive Oil
- 1 splash dry White Wine
- Pepper (from the mill)
Instructions
- 1. Boil water in a large pot and add salt.
- 2. Add the spaghetti to the boiling water and cook until al dente (firm to the bite).
- 3. Finely grate the peel of one orange.
- 4. Squeeze the juice of the orange.
- 5. Peel the bottom third of the asparagus stalks with a vegetable peeler.
- 6. Cut the asparagus stalks into bite-sized pieces.
- 7. Wash the spring onions and dry them.
- 8. Slice the spring onions into thin rings.
- 9. Heat oil in a large pan.
- 10. Add the asparagus pieces to the hot pan and sauté them briefly.
- 11. Deglaze the asparagus with white wine.
- 12. Let the liquid reduce briefly.
- 13. Add the orange juice and orange zest to the pan.
- 14. Season the mixture with salt and pepper.
- 15. Cover the pan and let the asparagus cook for about 8 minutes.
- 16. Add the spring onion rings to the pan.
- 17. Let the spring onions cook briefly with the asparagus.
- 18. Add the drained spaghetti to the pan.
- 19. Toss the pasta briefly in the sauce to combine.
- 20. Taste the dish and adjust seasoning with salt and pepper if needed.
- 21. Serve the pasta warm.
- 22. Serve bruschetta (toasted bread with topping) on the side if desired.
