🍝 Crispy Pasta with Cracklings and Nuts

Ingredients
- 200 g Spaghetti
- 1 Spring onion (cleaned and cut into small pieces)
- 1 green chili pepper (washed and cut into rings)
- 60 g fresh goose fat
- 1 tbsp goose fat
- 2 tbsp roasted peanuts
- Salt
- Pepper (from the mill)
- 1 tbsp finely chopped coriander leaves
- 0.5 Lime (cut into wedges)
Instructions
- 1. Bring plenty of water to a boil and add salt.
- 2. Cook the pasta in it until al dente.
- 3. Remove half a cup of the pasta water and set it aside.
- 4. Drain the pasta and let it drip dry well.
- 5. Meanwhile, heat the goose fat in a pan.
- 6. Add the spring onions and chili rings to the hot fat.
- 7. Sauté the vegetables for about two to three minutes.
- 8. Add the cracklings and peanuts to the pan.
- 9. Let the ingredients heat through briefly.
- 10. Season the mixture with salt and pepper.
- 11. Add the drained pasta to the pan.
- 12. Pour in the reserved pasta water.
- 13. Mix everything together thoroughly.
- 14. Divide the pasta among the plates.
- 15. Garnish the dish with fresh coriander and lime wedges.
- 16. Serve the pasta immediately.
