🍝 Pasta salad with caramelized onions, tomatoes, olives and feta

Ingredients
- 250 g short elbow macaroni
- 4 red onions
- 4 tbsp olive oil
- 0.5 tsp sugar
- 150 g dried marinated tomatoes (drained)
- 2 tbsp capers
- 200 g feta
- 0.5 tsp salt
- 0.5 tsp liquid honey
- 2 tbsp lemon juice
- 1 tbsp white wine vinegar
- 1 pinch mustard
- Parsley (for garnish)
Instructions
- 1. Boil plenty of water in a large pot and salt it generously.
- 2. Cook the pasta in it according to the package instructions until al dente.
- 3. Drain the pasta and rinse it immediately with cold water to stop the cooking process.
- 4. Let the pasta cool down completely.
- 5. Peel the onions and cut them into thin strips.
- 6. Heat 2 tablespoons of olive oil in a pan.
- 7. Sauté the onion strips in the hot oil.
- 8. Sprinkle the sugar over the onions.
- 9. Caramelize the onions until they are golden brown and sweet.
- 10. Let the caramelized onions cool down.
- 11. Let the dried tomatoes drain well.
- 12. Cut the dried tomatoes into small pieces.
- 13. Let the capers drain well as well.
- 14. Cut the sheep's cheese (feta) into approx. 1 cm cubes.
- 15. Add the cooled pasta, the caramelized onions, the capers, the feta and the tomatoes to a large bowl.
- 16. Mix all ingredients gently and loosely together.
- 17. Put salt, honey, lemon juice, vinegar, mustard and the remaining oil in a small bowl.
- 18. Stir the ingredients together to form a uniform marinade.
- 19. Pour the marinade over the pasta salad.
- 20. Mix the salad so that the marinade is well distributed.
- 21. Garnish the finished salad with fresh parsley.
- 22. Serve the salad immediately.
