🍝 Creative Chanterelle Pasta

Ingredients
- 400 g whole wheat noodles (pappardelle noodles)
- salt
- 1 onion
- 2 garlic cloves
- 600 g chanterelles
- 30 g butter (2 tbsp)
- 1 sprig rosemary
- 1 sprig thyme
- 2 sprigs parsley
- 120 ml vegetable broth
- 150 ml whipping cream
- pepper (from the mill)
Instructions
- 1. Boil plenty of water in a large pot and add some salt.
- 2. Add the pasta to the boiling water and cook until al dente.
- 3. Peel the onion and the garlic.
- 4. Finely chop the onion and the garlic.
- 5. Clean the mushrooms thoroughly.
- 6. Halve the mushrooms if they are very large.
- 7. Heat a pan and melt the butter in it.
- 8. Fry the onion and garlic in the hot butter.
- 9. Add the mushrooms to the pan and fry them along with the onions.
- 10. Wait until the liquid from the mushrooms has evaporated.
- 11. Wash the herbs.
- 12. Shake the herbs dry.
- 13. Finely chop the herbs.
- 14. Mix the herbs with the mushrooms.
- 15. Deglaze the pan with the vegetable broth.
- 16. Pour in the cream.
- 17. Season the sauce with salt and pepper.
- 18. Cook the sauce over medium heat for about 7 minutes.
- 19. Drain the pasta in a colander.
- 20. Let the pasta drain well.
- 21. Warm the plates.
- 22. Serve the pasta with the mushrooms on the warmed plates.
