🍝 Band Noodles with Smoked Trout and Dill

Ingredients
- 100 g Wheat whole wheat flour
- 100 g Flour (Type 405 + Flour for working)
- 2 Eggs
- 1 tbsp Olive oil
- Salt
- Semolina (for working)
- 140 g large Onions (2 large Onions)
- 0.5 bunch Dill
- 150 g Smoked trout fillet (2 Smoked trout fillets)
- 1 tbsp Rapeseed oil
- 40 ml Vodka (or fish stock)
- 175 ml Soy cream
- Pepper
- 30 g Trout caviar (2 tbsp)
Instructions
- 1. Put both types of flour into a large bowl.
- 2. Add the eggs, olive oil, salt, and 1 to 2 tablespoons of water.
- 3. Knead the ingredients with the dough hooks of a hand mixer until you have a smooth, firm dough.
- 4. If the dough seems too dry, knead in a little more water.
- 5. Sprinkle some flour on your work surface.
- 6. Place the dough on it and knead it vigorously for 5 minutes with hands lightly dusted with flour.
- 7. Wrap the dough in cling film.
- 8. Let the dough rest in the refrigerator for 1 hour.
- 9. Lightly flour the work surface again.
- 10. Roll out the dough with a pasta machine to a thickness of about 2 to 3 millimeters.
- 11. Dust the dough with flour occasionally to prevent it from sticking.
- 12. Grease a baking tray with semolina.
- 13. Cut the dough into ribbon noodles using the pasta machine.
- 14. Place the noodles as small nests on the prepared tray.
- 15. Set the noodles aside.
- 16. Peel the onions.
- 17. Dice the onions finely.
- 18. Wash the dill.
- 19. Shake the dill dry.
- 20. Pluck off the dill leaves.
- 21. Finely chop the dill.
- 22. Break the smoked trout fillets into bite-sized pieces with your hands.
- 23. Heat the rapeseed oil in a pan.
- 24. Fry the onions in it until light brown, stirring frequently over medium heat.
- 25. Fill a large pot with plenty of water and add salt.
- 26. Bring the water to a boil.
- 27. Stir the vodka or fish stock into the onions.
- 28. Add the soy cream.
- 29. Let the sauce reduce until creamy for about 3 minutes.
- 30. Keep the sauce warm at the edge of the stove.
- 31. Add the noodles to the boiling salted water.
- 32. Cook the noodles al dente in 3 to 4 minutes.
- 33. Drain the noodles.
- 34. Let the noodles drain well.
- 35. Bring the sauce back to a boil.
- 36. Fold in the noodles, trout pieces, and dill into the sauce.
- 37. Season the dish with salt and pepper.
- 38. Serve the noodles onto the plates.
- 39. Distribute the caviar in small mounds on top of the noodles.
- 40. Serve the dish immediately.
