🍝 Linguine with Smoked Salmon and Peas

Ingredients
- 400 g Linguine
- Salt
- 200 g Smoked Salmon (sliced)
- 1 Onion
- 1 Clove of Garlic
- 1 tbsp Olive Oil
- 150 g Peas (frozen)
- 150 ml Fish Stock
- 200 ml Heavy Cream
- 1 tbsp Lemon Juice
- 1 dash Vermouth
- Pepper (freshly ground)
Instructions
- 1. Bring a large pot of salted water to a boil.
- 2. Add the linguine to the boiling water and cook until al dente (firm to the bite).
- 3. Cut the smoked salmon into thin strips.
- 4. Peel the onion and the garlic.
- 5. Dice the onion and garlic very finely.
- 6. Heat oil in a large pan.
- 7. Add the diced onion and garlic to the hot pan.
- 8. Sauté the vegetables until translucent (soft and see-through).
- 9. Add the thawed peas to the pan.
- 10. Deglaze the mixture with the stock (broth).
- 11. Add the cream.
- 12. Let the sauce simmer slightly until it thickens.
- 13. Drain the cooked pasta.
- 14. Add the drained pasta to the sauce in the pan.
- 15. Fold in the salmon strips.
- 16. Add lemon juice.
- 17. Add vermouth (aromatic fortified wine).
- 18. Season to taste with salt and pepper.
- 19. Serve the dish immediately.
