🍝 Spaghetti with Spring Onions and Sheep's Cheese

Ingredients
- 400 g Spaghetti
- 2 bunch Spring Onions
- 1 tbsp Butter
- 200 g Heavy Cream
- 0.5 Lemon (Juice)
- 100 g Feta Cheese
- Salt
- Pepper (from the mill)
Instructions
- 1. Cook the spaghetti in salted water until they are still firm to the bite (al dente).
- 2. Clean the spring onions and wash them. Cut the white parts into fine strips and the green parts into rings. Set both parts aside.
- 3. Sauté the white parts of the spring onions in hot butter until they are soft and translucent.
- 4. Mix the cream with lemon juice and crumbled sheep's cheese (save some cheese for later). Puree the mixture finely, add it to the onions, heat it, and season with salt and pepper.
- 5. Drain the pasta and serve it with the sauce, the remaining sheep's cheese, and the green parts of the spring onions.
