🍝 Spaghetti with Fresh Spinach

Ingredients
- 500 g young spinach
- 1 shallot
- 2 garlic cloves
- 1 red chili pepper
- 400 g spaghetti
- salt
- 4 tbsp olive oil
- pepper
- 50 g parmesan (1 piece)
Instructions
- 1. Thoroughly wash the fresh spinach and shake it dry.
- 2. Set aside a few nice, intact spinach leaves for decoration.
- 3. Peel the shallot and the garlic clove.
- 4. Finely chop the shallot and garlic.
- 5. Wash the chili pepper and remove the seeds.
- 6. Cut the chili into very fine strips.
- 7. Bring plenty of water to a boil and add salt.
- 8. Cook the spaghetti in this salted water until al dente (firm to the bite).
- 9. Heat the oil in a large pan.
- 10. Sauté the chopped shallot and garlic in the oil until translucent.
- 11. Add the fine chili strips to the pan.
- 12. Season the mixture with salt and black pepper.
- 13. Add the remaining spinach (except the reserved leaves) to the pan.
- 14. Fry the spinach over high heat until it wilts.
- 15. Turn the spinach occasionally while doing so.
- 16. Finally, adjust the seasoning of the spinach mixture with salt and pepper.
- 17. Drain the cooked spaghetti.
- 18. Portion the spaghetti onto the plates.
- 19. Place the warm spinach on top of the pasta.
- 20. Garnish the dish with the reserved fresh spinach leaves.
- 21. Sprinkle the pasta with freshly grated Parmesan cheese.
