  1. 1. Boil plenty of salted water and cook the spaghetti in it until al dente (firm to the bite).
  2. 2. Drain the pasta, but keep a small cup of the pasta cooking water ready.
  3. 3. Peel the onion and chop it into fine dice.
  4. 4. Heat two tablespoons of oil in a large pan.
  5. 5. Add the bacon and the chopped onion to the pan and sauté them until soft.
  6. 6. Stir in the walnut kernels and fry them briefly.
  7. 7. Add the drained pasta to the pan and mix everything well.
  8. 8. Fry the pasta briefly together with the bacon and nuts.
  9. 9. Season the mixture with salt and pepper to taste.
  10. 10. Stir one to two tablespoons of nut oil into the pasta.
  11. 11. Add the parsley to the pasta.
  12. 12. Crumble the Gorgonzola cheese over the warm pasta.
  13. 13. Stir everything briefly until the cheese melts slightly.
  14. 14. If the pasta looks too dry, stir in two to three tablespoons of the previously prepared pasta water.
  15. 15. Distribute the pasta onto plates or bowls.
  16. 16. Serve the dish immediately while hot.
