🍝 Creamy Pasta with Artichokes

Ingredients
- 8 fresh artichokes
- 4 garlic cloves
- 4 sprigs parsley (finely chopped)
- juice of half a lemon
- olive oil (extra virgin)
- 30 g butter
- 500 g penne
- salt
- pepper (, freshly ground)
- parmesan
Instructions
- 1. Cut off the tough outer leaves and stems from the artichokes.
- 2. Halve the artichokes and place them in a bowl of water with some lemon juice to prevent discoloration.
- 3. Then dry the artichokes thoroughly with a kitchen towel.
- 4. Peel the garlic cloves.
- 5. Heat four tablespoons of olive oil in a large pan.
- 6. Fry the artichokes and garlic in it.
- 7. Add the lemon juice, 50 grams of water, and half of the chopped parsley.
- 8. Let everything simmer covered for about 20 minutes on low heat.
- 9. Season the artichokes with salt and pepper to taste once they are soft.
- 10. Melt the butter in a separate pan.
- 11. Cook the pasta in salted water al dente (firm to the bite).
- 12. Mix the melted butter with the artichokes and the remaining parsley.
- 13. Add the pasta and mix everything well.
- 14. Serve the dish immediately with plenty of grated Parmesan.
