🍰 Creamy Passion Fruit and Lemon Delight

Ingredients
- 1 vanilla pod
- 250 g crème fraîche
- 6 egg yolks
- 60 g powdered sugar from raw cane sugar
- 40 g melted butter
- 1 tbsp spelt flour Type 1050 (15 g)
- 1 tbsp cornstarch (15 g)
- 1 lemon
- 3 passion fruits
- 100 g Greek yogurt
Instructions
- 1. Cut the vanilla pod lengthwise.
- 2. Scrape out the tiny seeds from the pod.
- 3. Place the vanilla paste into a large bowl.
- 4. Add the crème fraîche to the bowl.
- 5. Add the egg yolks.
- 6. Sprinkle in the powdered sugar.
- 7. Add the butter to the mixture.
- 8. Add the flour.
- 9. Add the starch.
- 10. Stir everything together until the mixture is completely smooth.
- 11. Halve the lemon.
- 12. Halve two passion fruits.
- 13. Squeeze the juice from the lemon and the passion fruits.
- 14. Strain the juice through a sieve to remove all seeds.
- 15. Stir the juice into the egg mixture.
- 16. Pour the mixture into a baking dish with a capacity of about 1.2 liters.
- 17. Preheat the oven to 180 degrees Celsius.
- 18. Bake the dessert for about 25 minutes.
- 19. Ensure the cream is still slightly jiggly in the center.
- 20. Let the cream cool down briefly.
- 21. Place the cream in the refrigerator for about 2 hours.
- 22. Halve the last passion fruit.
- 23. Squeeze the juice from the last passion fruit.
- 24. Place the yogurt on top of the cold cream.
- 25. Drizzle the dessert with the passion fruit juice.
- 26. Add the passion fruit seeds on top.
- 27. Serve the dessert.
