🍰 Traditional Paskha Cake

Ingredients
- 1 kg Skyr
- 125 g Butter
- 1 Pinch Salt
- 5 Eggs
- 250 g Sour Cream
- 200 g Raisins
- 100 g Brown Cane Sugar
- 1 Lemon Zest
- 70 g Chopped Almonds
- 15 g Citron
- 15 g Orange Peel
- 50 g Candied Fruit
Instructions
- 1. Place the quark into a fine muslin cloth.
- 2. Tie the corners of the cloth together.
- 3. Hang the cloth over a pot so the whey can drain off.
- 4. Let the quark drain for several hours until it is as dry as possible.
- 5. Beat the butter until fluffy.
- 6. Transfer the butter into a pot.
- 7. Add salt, eggs, sour cream, and the drained quark.
- 8. Heat the mixture over very low heat while stirring constantly.
- 9. Do not let the mixture boil under any circumstances.
- 10. Remove the pot from the heat as soon as small bubbles appear.
- 11. Let the quark mixture cool down while stirring occasionally.
- 12. Wash the raisins thoroughly.
- 13. Dry the raisins with a cloth.
- 14. Mix the raisins with sugar.
- 15. Fold in the lemon zest.
- 16. Add the chopped almonds.
- 17. Add the citron.
- 18. Add the orange peel.
- 19. Wash a flower pot thoroughly.
- 20. Dry the flower pot.
- 21. Line the inside of the pot with a muslin cloth.
- 22. Fill the cooled quark mixture into the pot.
- 23. Press the mixture down firmly.
- 24. Place a plate on top of the mixture.
- 25. Weight the plate with a heavy object.
- 26. Place the flower pot on a wire rack.
- 27. Place the rack into a bowl.
- 28. Place everything in the refrigerator for 24 hours.
- 29. Invert the cake onto a plate before serving.
- 30. Decorate the cake with candied fruits.
