Ingredients
- 1 kg low-fat quark
- 125 g soft butter
- 1 pinch salt
- 5 eggs
- 0.25 l sour cream
- 1 cup raisins
- 200 g sugar
- 1 lemon (zest)
- 1 cup almond kernels (peeled, chopped)
- candied lemon peel (1 tbsp each, finely chopped)
- candied orange peel (1 tbsp each, finely chopped)
- 2 kiwis
- 2 mandarins
- 1 untreated orange (use the zest)
Instructions
- 1. Place the quark into a cheesecloth.
- 2. Tie the cloth and hang it over a pot.
- 3. Let the whey drip off for a few hours.
- 4. Beat the butter until fluffy.
- 5. Add the butter, salt, eggs, sour cream, and drained quark to a pot.
- 6. Heat the mixture while stirring constantly.
- 7. Do not let the mixture boil.
- 8. Remove the quark mixture from the heat as soon as bubbles appear.
- 9. Let the mixture cool down while stirring.
- 10. Wash the raisins.
- 11. Dry the raisins.
- 12. Mix the raisins with the sugar, lemon zest, chopped almonds, citron, and orange peel.
- 13. Preheat the oven.
- 14. Blanch the orange zest briefly in boiling water.
- 15. Shock the orange zest.
- 16. Let the orange zest drain well.
- 17. Turn out the Pasha onto a plate before serving.
- 18. Garnish the Pasha with kiwi slices, orange zest, and mandarin segments.
- 19. Serve the Pasha.
