🍰 Fruity Berry Parfait

Ingredients
- 200 g blackberries
- 200 g strawberries
- 5 eggs
- 100 g powdered sugar
- 1 pinch salt
- 200 ml whipping cream
Instructions
- 1. Wash the berries thoroughly and remove any stems or leaves.
- 2. Puree the cleaned berries until smooth.
- 3. Separate the eggs: Carefully separate the yolks from the whites.
- 4. Whisk the egg yolks with the sugar in a metal bowl.
- 5. Place the metal bowl over a pot of hot, but not boiling water (bain-marie).
- 6. Whisk the egg yolk and sugar mixture for 7 to 10 minutes until thick and creamy.
- 7. Remove the bowl from the hot water bath and place it immediately into an ice water bath.
- 8. Continue whisking the mixture in the ice bath until it is completely cool.
- 9. Whisk the egg whites with a pinch of salt until stiff peaks form.
- 10. Whip the cream until stiff as well.
- 11. Stir the berry puree into the cooled egg yolk mixture.
- 12. Gently fold in the egg whites and the whipped cream into the fruit mixture.
- 13. Fill the mixture into small bowls or molds.
- 14. Place the bowls in the freezer for at least 4 hours.
- 15. Take the parfaits out of the freezer shortly before serving.
- 16. Dip the molds into hot water for a few seconds.
- 17. Invert the parfaits onto plates and serve immediately.
