  1. 1. Wash the berries thoroughly and remove any stems or leaves.
  2. 2. Puree the cleaned berries until smooth.
  3. 3. Separate the eggs: Carefully separate the yolks from the whites.
  4. 4. Whisk the egg yolks with the sugar in a metal bowl.
  5. 5. Place the metal bowl over a pot of hot, but not boiling water (bain-marie).
  6. 6. Whisk the egg yolk and sugar mixture for 7 to 10 minutes until thick and creamy.
  7. 7. Remove the bowl from the hot water bath and place it immediately into an ice water bath.
  8. 8. Continue whisking the mixture in the ice bath until it is completely cool.
  9. 9. Whisk the egg whites with a pinch of salt until stiff peaks form.
  10. 10. Whip the cream until stiff as well.
  11. 11. Stir the berry puree into the cooled egg yolk mixture.
  12. 12. Gently fold in the egg whites and the whipped cream into the fruit mixture.
  13. 13. Fill the mixture into small bowls or molds.
  14. 14. Place the bowls in the freezer for at least 4 hours.
  15. 15. Take the parfaits out of the freezer shortly before serving.
  16. 16. Dip the molds into hot water for a few seconds.
  17. 17. Invert the parfaits onto plates and serve immediately.
