  2. 2. Set aside eight stuffed olives for later decoration.
  3. 3. Halve the remaining stuffed olives through the middle.
  4. 4. Rinse the oranges under hot water.
  5. 5. Dry the oranges with a cloth.
  6. 6. Finely grate the zest of one orange to use the peel.
  7. 7. Whisk the egg, egg yolks, and sugar for about five minutes until white and foamy.
  8. 8. Chop the white chocolate into small pieces.
  9. 9. Melt the chocolate pieces over a bowl of hot water.
  10. 10. Stir the melted chocolate into the egg mixture.
  11. 11. Stir the orange liqueur into the chocolate-egg mixture.
  12. 12. Whip the cream until stiff.
  13. 13. Gently fold the whipped cream into the chocolate mixture.
  14. 14. Fold the halved olives into the mixture.
  15. 15. Fold the remaining raisins into the mixture.
  16. 16. Fill the mixture into eight small molds with a diameter of about eight centimeters.
  17. 17. Cover the molds.
  18. 18. Freeze the parfaits for about four hours.
  19. 19. Cut the second orange in half.
  20. 20. Slice one orange half into thin wedges.
  21. 21. Peel the zest from the other orange half into long strips.
  22. 22. Dip the molds briefly in hot water.
  23. 23. Turn out the parfaits onto plates.
  24. 24. Garnish the parfaits with the orange wedges.
  25. 25. Garnish the parfaits with the orange zest strips.
  26. 26. Garnish the parfaits with the remaining olives.
