🍽️ White Chocolate Parfait with Oranges and Olives

Ingredients
- 14 olives (pitted)
- 25 sultanas
- 2 unpeeled oranges
- 1 egg
- 4 egg yolks
- 200 g sugar
- 180 g white chocolate
- 40 ml orange liqueur (e.g. Grand Marnier)
- 400 ml cold whipping cream
- mint (for garnishing)
- sultanas (for garnishing)
Instructions
- 1. Stuff each olive with a raisin.
- 2. Set aside eight stuffed olives for later decoration.
- 3. Halve the remaining stuffed olives through the middle.
- 4. Rinse the oranges under hot water.
- 5. Dry the oranges with a cloth.
- 6. Finely grate the zest of one orange to use the peel.
- 7. Whisk the egg, egg yolks, and sugar for about five minutes until white and foamy.
- 8. Chop the white chocolate into small pieces.
- 9. Melt the chocolate pieces over a bowl of hot water.
- 10. Stir the melted chocolate into the egg mixture.
- 11. Stir the orange liqueur into the chocolate-egg mixture.
- 12. Whip the cream until stiff.
- 13. Gently fold the whipped cream into the chocolate mixture.
- 14. Fold the halved olives into the mixture.
- 15. Fold the remaining raisins into the mixture.
- 16. Fill the mixture into eight small molds with a diameter of about eight centimeters.
- 17. Cover the molds.
- 18. Freeze the parfaits for about four hours.
- 19. Cut the second orange in half.
- 20. Slice one orange half into thin wedges.
- 21. Peel the zest from the other orange half into long strips.
- 22. Dip the molds briefly in hot water.
- 23. Turn out the parfaits onto plates.
- 24. Garnish the parfaits with the orange wedges.
- 25. Garnish the parfaits with the orange zest strips.
- 26. Garnish the parfaits with the remaining olives.
- 27. Garnish the parfaits with mint leaves.
- 28. Garnish the parfaits with raisins.
