🍽️ Italian-style Pepper Vegetables

Ingredients
- 3 garlic cloves
- 1 onion
- 2 yellow bell peppers
- 2 red bell peppers
- 4 tomatoes
- 2 red chili peppers
- 5 tbsp olive oil
- 50 g green olives (pitted)
- 20 g capers
- salt
- pepper (from the mill)
- 2 tbsp oregano (dried)
- 4 slices rye whole grain bread
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the peppers and cut them into quarters. Remove the seeds.
- 3. Place the pepper pieces on a baking sheet lined with baking paper. Make sure the skin side is facing up.
- 4. Grill the peppers in the oven for 4 to 8 minutes until the skin turns black.
- 5. Take the peppers out of the oven and place them under a cold, damp kitchen towel for about 2 minutes.
- 6. Peel the blackened skin off the peppers using a small knife.
- 7. Cut the peeled peppers into pieces about 2 centimeters in size.
- 8. Peel the garlic and cut it into fine cubes.
- 9. Peel the onion and cut it into wedges.
- 10. Wash the tomatoes and remove the green stem area.
- 11. Cut the tomatoes into pieces about 1.5 centimeters in size.
- 12. Heat the oil in a pot.
- 13. Sauté the garlic and onion wedges in the hot oil for about 2 minutes.
- 14. Add the remaining ingredients (peppers and tomatoes).
- 15. Sauté everything together for another 2 to 4 minutes.
- 16. Take the vegetables out of the pot and arrange them in a bowl.
- 17. Serve the dish with bread.
