🍽️ Stewed Pepper and Tomato Vegetable Mix

Ingredients
- 2 yellow bell peppers
- 2 green bell peppers
- 2 red bell peppers
- 2 tomatoes
- 2 garlic cloves
- 1 onion
- 4 tbsp olive oil
- salt
- sugar
- pepper (from the mill)
Instructions
- 1. Wash the bell peppers thoroughly.
- 2. Halve the bell peppers and remove the insides along with the seeds.
- 3. Cut the pepper flesh into thin strips.
- 4. Wash the tomatoes.
- 5. Quarter the tomatoes.
- 6. Remove the hard stem base and seeds from the tomato quarters.
- 7. Dice the remaining tomato flesh into small cubes.
- 8. Peel the garlic clove and the onion.
- 9. Mince the garlic and onion very finely.
- 10. Heat the oil in a frying pan.
- 11. Add the minced garlic and onion to the hot oil.
- 12. Sauté the vegetables gently over medium heat until they soften, but do not brown.
- 13. Add the pepper strips and tomato cubes to the pan.
- 14. Cover the pan with a lid.
- 15. Cook the vegetables over low heat for approx. 10 minutes.
- 16. Stir the vegetables occasionally to ensure even cooking.
- 17. Season the mixture with salt, a pinch of sugar, and black pepper.
- 18. Optionally add a splash of wine vinegar to taste.
- 19. Serve the vegetable mix lukewarm or cold.
