  1. 1. Rinse the savoy cabbage thoroughly under running water.
  2. 2. Remove the tough stems and slice the leaves into thin strips.
  3. 3. Peel the onion and cut it in half.
  4. 4. Slice the onion halves into thin strips as well.
  5. 5. Wash the half of the bell pepper and remove the inside with the seeds.
  6. 6. Cut the bell pepper into strips.
  7. 7. Place the onion strips and the vegetable broth in a small pot.
  8. 8. Bring the mixture to a boil.
  9. 9. Cover the pot and let the vegetables cook for 5 to 6 minutes.
  10. 10. Rinse the thyme sprigs under cold water.
  11. 11. Shake the sprigs dry to remove excess water.
  12. 12. Strip the leaves off two of the thyme sprigs.
  13. 13. Add the savoy cabbage and bell pepper strips to the broth in the pot.
  14. 14. Cover the pot again.
  15. 15. Let the vegetables cook for another 8 to 10 minutes over low heat.
  16. 16. Season the vegetables to taste with salt and pepper.
  17. 17. Remove the pot from the heat and plate the vegetables.
  18. 18. Garnish the dish with the remaining thyme leaves.
