🍽️ Veal Rolls with Pepper and Ham

Ingredients
- 8 thin veal cutlets (approx. 80 g each)
- salt
- pepper (from the mill)
- 8 tsp tomato paste
- 1 small red bell pepper
- 1 green bell pepper
- 100 g cat ham (thinly sliced)
- wooden skewers
- 2 tbsp olive oil
- 200 ml white wine
- thyme sprig
- 1 tbsp small capers
Instructions
- 1. Pound the veal cutlets flat using a meat mallet.
- 2. Season the meat slices with salt and pepper.
- 3. Spread one teaspoon of tomato paste onto each cutlet.
- 4. Quarter the bell peppers and remove the seeds.
- 5. Remove all white inner membranes from the peppers.
- 6. Rinse the pepper pieces under running water.
- 7. Cut the peppers into thin strips.
- 8. Distribute the ham strips over the meat slices.
- 9. Place the pepper strips on top of the ham.
- 10. Roll up the meat slices tightly.
- 11. Secure the rolls with wooden skewers.
- 12. Heat olive oil in a large pan.
- 13. Fry the rolls on all sides until browned.
- 14. Deglaze the meat with wine.
- 15. Add fresh thyme sprigs.
- 16. Simmer the rolls covered for about ten minutes.
- 17. Add the capers to the pan.
- 18. Season the dish with salt and pepper to taste.
- 19. Serve the rolls with sautéed vegetables.
