  1. 1. Wash the frisée lettuce, bell peppers, and tomatoes thoroughly. Tear the lettuce into small, bite-sized pieces and cut the bell peppers into small cubes.
  2. 2. Cut the tomato into eight wedges. Peel the onions and slice them into rings. Arrange everything on a large platter. Scatter the olives, crumble the sheep's cheese over it, and sprinkle the thyme leaves on top.
  3. 3. Whisk together the lemon juice, honey, mustard, and oil to make the dressing. Season the sauce with salt and pepper, and pour it over the salad.
