🍝 Paprika Pasta Salad

Ingredients
- 400 g Penne
- bell peppers (1 green, 1 yellow, and 1 red)
- 1 red onion
- 5 tbsp olive oil
- salt
- pepper (from the mill)
- 2 tbsp balsamic vinegar
- basil
Instructions
- 1. Bring plenty of water to a boil with salt.
- 2. Cook the pasta in it until al dente.
- 3. Take one cup of the pasta water and set it aside.
- 4. Drain the pasta and let it drip dry.
- 5. Wash the peppers and remove the inside with the seeds.
- 6. Cut the peppers into thin strips.
- 7. Peel the onion.
- 8. Cut the onion into thin wedges.
- 9. Heat olive oil in a pan.
- 10. Sauté the peppers and onions in it.
- 11. Cook the vegetables until al dente.
- 12. Deglaze the vegetables with balsamic vinegar.
- 13. Season the mixture with salt and pepper.
- 14. Mix the pasta with the vegetables.
- 15. Add some of the reserved pasta water if needed.
- 16. Serve the salad on plates.
- 17. Garnish with fresh basil leaves.
