🍽️ Couscous with Paprika and Lime plus Grilled Mackerel

Ingredients
- 400 g yellow bell peppers (2 yellow bell peppers)
- 1 lime
- 125 g couscous
- 250 g fresh mackerel fillets (with skin, 4 fresh mackerel fillets)
- 1 tsp germ oil
- salt
- 0.5 bunch cilantro
- cayenne pepper
- pepper
Instructions
- 1. Thoroughly wash the bell peppers.
- 2. Remove the seeds and white pith from the bell peppers.
- 3. Cut the bell peppers into four large pieces.
- 4. Slice the pepper pieces into thin, fine strips.
- 5. Rinse the lime under hot water.
- 6. Dry the lime with a clean cloth.
- 7. Finely grate the outer orange zest of the lime.
- 8. Cut the lime in half.
- 9. Squeeze the juice from both lime halves.
- 10. Place the couscous into a pot.
- 11. Pour 175 milliliters of water into the pot with the couscous.
- 12. Add the grated lime zest to the pot.
- 13. Add the sliced pepper strips to the pot.
- 14. Bring the mixture in the pot to a boil.
- 15. Stir the ingredients in the pot.
- 16. Turn the heat down to a low setting.
- 17. Cover the pot with a lid.
- 18. Let the couscous cook for about 6 minutes.
- 19. Rinse the mackerel fillets under running water.
- 20. Dry the mackerel fillets with kitchen paper.
- 21. Heat a grill pan on the stove.
- 22. Brush the hot grill pan with some oil.
- 23. Season the inner sides of the mackerel fillets with salt.
- 24. Place the mackerel fillets in the pan with the inner side facing down.
- 25. Grill the fillets over medium heat for 3 minutes.
- 26. Turn the mackerel fillets in the pan.
- 27. Grill the fillets on the skin side for another 3 minutes.
- 28. Wash the fresh coriander thoroughly.
- 29. Shake the coriander dry to remove excess water.
- 30. Pluck the coriander leaves from the stems.
- 31. Set aside some coriander leaves for garnishing.
- 32. Finely chop the remaining coriander.
- 33. Add the chopped coriander to the finished couscous.
- 34. Season the couscous with salt to taste.
- 35. Season the couscous with cayenne pepper to taste.
- 36. Drizzle the inner sides of the grilled mackerel fillets with 2 to 3 teaspoons of lime juice.
- 37. Sprinkle fresh pepper onto the mackerel fillets.
- 38. Place the mackerel fillets on top of the couscous.
- 39. Garnish the dish with the reserved coriander leaves.
