  1. 1. Boil water in a large pot and add salt.
  2. 2. Add the pappardelle noodles to the boiling water.
  3. 3. Cook the noodles for the time stated on the package until they are al dente.
  4. 4. Drain the noodles in a colander.
  5. 5. Clean the mushrooms and cut them into rough chunks.
  6. 6. Dice the shallots into small cubes.
  7. 7. Heat olive oil in a large frying pan.
  8. 8. Fry the mushrooms and shallots over high heat.
  9. 9. Press the garlic through a press and add it to the pan.
  10. 10. Let the mixture simmer over low heat for a few minutes.
  11. 11. Season the mushroom mixture with salt and pepper.
  12. 12. Add the drained noodles to the pan with the mushrooms.
  13. 13. Gently fold the noodles into the mushroom sauce.
  14. 14. Finely chop the parsley.
  15. 15. Add the parsley to the noodles and mix briefly.
  16. 16. Serve the pappardelle on plates.
  17. 17. Sprinkle the dish with coarsely ground black pepper.
