🍽️ Pappardelle with Fried Mushrooms

Ingredients
- 400 g wide ribbon noodles
- Shiitake mushrooms (300g each)
- Champignons (300g each)
- 2 shallots (finely chopped)
- 1 garlic clove
- 2 tbsp lemon juice
- 4 tbsp olive oil
- salt
- pepper (from the mill)
- parsley (for garnishing)
Instructions
- 1. Boil water in a large pot and add salt.
- 2. Add the pappardelle noodles to the boiling water.
- 3. Cook the noodles for the time stated on the package until they are al dente.
- 4. Drain the noodles in a colander.
- 5. Clean the mushrooms and cut them into rough chunks.
- 6. Dice the shallots into small cubes.
- 7. Heat olive oil in a large frying pan.
- 8. Fry the mushrooms and shallots over high heat.
- 9. Press the garlic through a press and add it to the pan.
- 10. Let the mixture simmer over low heat for a few minutes.
- 11. Season the mushroom mixture with salt and pepper.
- 12. Add the drained noodles to the pan with the mushrooms.
- 13. Gently fold the noodles into the mushroom sauce.
- 14. Finely chop the parsley.
- 15. Add the parsley to the noodles and mix briefly.
- 16. Serve the pappardelle on plates.
- 17. Sprinkle the dish with coarsely ground black pepper.
