  1. 1. Cut the papayas in half lengthwise.
  2. 2. Scoop out the seeds with a spoon.
  3. 3. Peel the fruit halves.
  4. 4. Pour 300 milliliters of water into a small saucepan.
  5. 5. Add the cane sugar to the water.
  6. 6. Place the saucepan on the stove.
  7. 7. Turn the heat to high.
  8. 8. Bring the sugar water to a boil.
  9. 9. Simmer the syrup for about 5 minutes.
  10. 10. Make sure the syrup does not become too thick.
  11. 11. Cut the papaya halves into small pieces.
  12. 12. Place the papaya pieces in a mixing beaker.
  13. 13. Pour the cooled sugar syrup over the papaya.
  14. 14. Add about 100 milliliters of lime juice.
  15. 15. Blend the mixture smooth with a hand blender.
  16. 16. Adjust the flavor of the puree with a little more lime juice.
  17. 17. Transfer the fruit puree into a metal bowl.
  18. 18. Cover the bowl.
  19. 19. Place the bowl in an ice cream maker.
  20. 20. Freeze the ice cream for 4 hours.
  21. 21. Stir the puree briefly with a cooking spoon every hour.
  22. 22. Shape the finished sorbet into balls or scoops as you like.
  23. 23. Place the sorbet into dessert bowls.
  24. 24. Garnish it with lime zest.
  25. 25. Serve the dessert.
