  1. 1. Cut the papayas in half lengthwise.
  2. 2. Scoop out the seeds with a spoon.
  3. 3. Peel the fruit halves.
  4. 4. Pour 300 milliliters of water into a small saucepan.
  5. 5. Add the cane sugar.
  6. 6. Place the pot over high heat.
  7. 7. Bring the sugar water to a boil.
  8. 8. Simmer the syrup for about 5 minutes.
  9. 9. Ensure the syrup is not too thick.
  10. 10. Cut the papaya into small pieces.
  11. 11. Place the papaya in a mixing jug.
  12. 12. Pour the warm sugar syrup over the papaya.
  13. 13. Add about 100 milliliters of lime juice.
  14. 14. Blend the mixture smooth with a hand blender.
  15. 15. Adjust the flavor of the puree with a little more lime juice.
  16. 16. Transfer the fruit puree into a metal bowl.
  17. 17. Cover the bowl.
  18. 18. Place the bowl in the ice cream maker.
  19. 19. Freeze the sorbet for 4 hours.
  20. 20. Stir the puree briefly with a cooking spoon every hour.
  21. 21. Shape the finished sorbet into balls or scoops as you like.
  22. 22. Place the sorbet into dessert bowls.
  23. 23. Garnish with lime zest.
  24. 24. Serve the dessert.
