🍽️ Fresh Papaya Sorbet

Ingredients
- 2 Papayas (á ca. 350 g)
- 3 Limes (juice)
- 80 g cane sugar
- Lime zest (for garnish)
Instructions
- 1. Cut the papayas in half lengthwise.
- 2. Scoop out the seeds with a spoon.
- 3. Peel the fruit halves.
- 4. Pour 300 milliliters of water into a small saucepan.
- 5. Add the cane sugar.
- 6. Place the pot over high heat.
- 7. Bring the sugar water to a boil.
- 8. Simmer the syrup for about 5 minutes.
- 9. Ensure the syrup is not too thick.
- 10. Cut the papaya into small pieces.
- 11. Place the papaya in a mixing jug.
- 12. Pour the warm sugar syrup over the papaya.
- 13. Add about 100 milliliters of lime juice.
- 14. Blend the mixture smooth with a hand blender.
- 15. Adjust the flavor of the puree with a little more lime juice.
- 16. Transfer the fruit puree into a metal bowl.
- 17. Cover the bowl.
- 18. Place the bowl in the ice cream maker.
- 19. Freeze the sorbet for 4 hours.
- 20. Stir the puree briefly with a cooking spoon every hour.
- 21. Shape the finished sorbet into balls or scoops as you like.
- 22. Place the sorbet into dessert bowls.
- 23. Garnish with lime zest.
- 24. Serve the dessert.
