🍽️ Fresh Papaya and Tomato Salad with Peanuts

Ingredients
- 1 medium green papaya
- 10 cherry tomatoes
- 80 g roasted, salted peanut kernels
- 2 garlic cloves
- 4 small red chili peppers
- 2 tbsp fish sauce
- 5 tbsp lime juice
- 1 tbsp palm sugar (or brown sugar)
Instructions
- 1. Peel the papaya and cut it in half.
- 2. Scrape out the hard seeds from the flesh and discard them.
- 3. Coarsely grate the papaya flesh.
- 4. Wash the cherry tomatoes and cut them into small pieces.
- 5. Peel the garlic clove and chop it finely.
- 6. Wash the chili peppers and chop them finely, including the seeds.
- 7. Place the chili and garlic in a mortar and crush them finely.
- 8. Add half of the peanuts and crush them coarsely.
- 9. Stir in the fish sauce, lime juice, and sugar into the paste.
- 10. Add the grated papaya and the tomatoes.
- 11. Lightly mash everything together to blend the flavors.
- 12. Divide the salad onto four plates.
- 13. Coarsely chop the remaining roasted peanuts.
- 14. Sprinkle the peanuts over the salad.
