  2. 2. Cut the cheese in half.
  3. 3. Slice the mozzarella halves into thin slices.
  4. 4. Peel the papaya.
  5. 5. Cut the papaya lengthwise into two halves.
  6. 6. Carefully remove the dark seeds with a spoon.
  7. 7. Cut the papaya halves crosswise into thin slices.
  8. 8. Rinse the chili pepper under running water.
  9. 9. Cut the chili lengthwise into two halves.
  10. 10. Remove the white membranes and seeds from the chili.
  11. 11. Dry the chili with a kitchen towel.
  12. 12. Cut the chili into very fine strips.
  13. 13. Wash the basil or mint leaves.
  14. 14. Shake the leaves dry.
  15. 15. Carefully pluck the leaves from the stems.
  16. 16. Arrange the papaya slices on shallow plates.
  17. 17. Distribute the mozzarella slices over the papaya.
  18. 18. Garnish the dish with the herb leaves.
