  1. 1. Wash the papaya thoroughly and pat it dry.
  2. 2. Peel the papaya and cut it in half.
  3. 3. Scoop out the seeds with a spoon.
  4. 4. Cut two narrow strips from the flesh and set them aside for garnish.
  5. 5. Dice the remaining papaya flesh.
  6. 6. Cut the passion fruits in half.
  7. 7. Scoop out the pulp from the shells with a spoon.
  8. 8. Rinse the mint and shake off excess water.
  9. 9. Pluck the leaves from the stems.
  10. 10. Save a few nice leaves for decoration.
  11. 11. Roughly chop the remaining mint.
  12. 12. Place the chopped mint into a tall blending jar.
  13. 13. Add the diced papaya.
  14. 14. Add the passion fruit pulp.
  15. 15. Add the yogurt to the jar.
  16. 16. Blend the mixture until smooth using a hand blender.
  17. 17. Pour in the sparkling water.
  18. 18. Blend the smoothie briefly again.
  19. 19. Pour the drink over ice cubes into a glass.
  20. 20. Garnish with the reserved papaya strips.
