🍽️ Crispy Panzanella with Chorizo and Peppers

Ingredients
- 250 g stale ciabatta
- 6 tbsp olive oil
- 2 garlic cloves
- 250 g chorizo
- 4 bell peppers (red and yellow)
- 1 red onion
- 0.5 cucumber
- 1 handful parsley
- 3 tbsp white balsamic vinegar
- salt
- 1 pinch sugar
- pepper (from the mill)
Instructions
- 1. Cut the ciabatta bread into small cubes.
- 2. Fry the bread cubes in 2 to 3 tablespoons of olive oil until golden brown and crispy.
- 3. Let the fried bread drain on kitchen paper.
- 4. Wipe the pan clean and heat 2 tablespoons of olive oil in it.
- 5. Peel the garlic and slice it thinly.
- 6. Slice the chorizo sausage.
- 7. Fry the chorizo slices together with the garlic in the hot pan until golden brown.
- 8. Let the chorizo drain on kitchen paper as well.
- 9. Wash the peppers, halve them, remove the seeds, and cut them into strips.
- 10. Peel the onion and dice it finely.
- 11. Peel the cucumber, halve it lengthwise, and scrape out the seeds.
- 12. Dice the cucumber halves into small pieces.
- 13. Rinse the parsley, shake it dry, and pick off the leaves.
- 14. Finely chop the parsley leaves.
- 15. Whisk the remaining oil with balsamic vinegar, salt, sugar, and pepper to make the dressing.
- 16. Taste the dressing and adjust seasoning if needed.
- 17. Gently mix all the prepared ingredients together.
- 18. Serve the panzanella immediately on plates.
