  1. 1. Cut the ciabatta bread into small cubes.
  2. 2. Fry the bread cubes in 2 to 3 tablespoons of olive oil until golden brown and crispy.
  3. 3. Let the fried bread drain on kitchen paper.
  4. 4. Wipe the pan clean and heat 2 tablespoons of olive oil in it.
  5. 5. Peel the garlic and slice it thinly.
  6. 6. Slice the chorizo sausage.
  7. 7. Fry the chorizo slices together with the garlic in the hot pan until golden brown.
  8. 8. Let the chorizo drain on kitchen paper as well.
  9. 9. Wash the peppers, halve them, remove the seeds, and cut them into strips.
  10. 10. Peel the onion and dice it finely.
  11. 11. Peel the cucumber, halve it lengthwise, and scrape out the seeds.
  12. 12. Dice the cucumber halves into small pieces.
  13. 13. Rinse the parsley, shake it dry, and pick off the leaves.
  14. 14. Finely chop the parsley leaves.
  15. 15. Whisk the remaining oil with balsamic vinegar, salt, sugar, and pepper to make the dressing.
  16. 16. Taste the dressing and adjust seasoning if needed.
