🍽️ Bread Salad with Grilled Peaches, Tomatoes, and Goat Cheese

Ingredients
- 3 peaches
- 600 g colorful cherry tomatoes
- 1 red bell pepper
- 2 sprigs basil
- 2 sprigs mint
- 1 red onion
- 4 slices spelt bread (50 g each)
- 5 tbsp olive oil
- 4 tbsp white wine vinegar
- salt
- pepper
- 200 g fresh goat cheese (45% fat in dry matter)
Instructions
- 1. Rinse the peaches, tomatoes, bell pepper, and herbs under running water.
- 2. Pat the vegetables and fruits dry with a kitchen towel.
- 3. Cut the peaches in half and remove the pit.
- 4. Cut the peach halves into wedges.
- 5. Clean the tomatoes and cut them into smaller pieces if necessary.
- 6. Halve the bell pepper and remove the inside.
- 7. Dice the bell pepper into small cubes.
- 8. Pluck the herb leaves off the stems.
- 9. Peel the onion.
- 10. Slice the onion into thin rings.
- 11. Brush the bread slices with one tablespoon of olive oil.
- 12. Brush the peach halves with one tablespoon of olive oil as well.
- 13. Fry the bread and peaches in a grill pan over medium heat.
- 14. Cook them for five minutes.
- 15. Cook until distinct grill marks appear on the surface.
- 16. Tear the fried bread into irregular pieces.
- 17. Put the vinegar into a bowl.
- 18. Add the remaining olive oil.
- 19. Season the dressing with salt and pepper.
- 20. Whisk the mixture vigorously.
- 21. Arrange the prepared ingredients colorfully on plates or a large platter.
- 22. Crumble the goat cheese with your hands.
- 23. Sprinkle the goat cheese over the salad.
- 24. Drizzle the salad with the dressing at the end.
