🍽️ Colorful Italian Bread Salad

Ingredients
- 150 g stale ciabatta
- 400 g tomatoes
- 2 bell peppers (1 small red and 1 small green each)
- 1 bunch spring onions
- 2 tbsp parsley (finely chopped)
- 2 tbsp basil (finely chopped)
- 2 garlic cloves
- 3 tbsp red wine vinegar
- salt
- pepper (from the mill)
- 5 tbsp olive oil
- 1 tbsp small capers
Instructions
- 1. Cut the bread into small cubes.
- 2. Wash the tomatoes and cut them into cubes as well.
- 3. Wash the bell peppers, halve them, remove the seeds, and cut the flesh into fine cubes.
- 4. Wash the spring onions, trim them, and slice the white and light green parts into fine strips.
- 5. Combine all the prepared vegetables and bread with the herbs in a large bowl and mix well.
- 6. Peel the garlic and chop it finely.
- 7. Whisk the vinegar with salt and pepper in a small bowl.
- 8. Slowly add the oil to the vinegar mixture while whisking continuously until a creamy emulsion forms.
- 9. Add the capers and the dressing to the bread salad and mix everything thoroughly.
- 10. Chill the salad in the refrigerator for about one hour before serving.
