🍰 Creamy Panna Cotta with Berry Topping

Ingredients
- 6 sheets white gelatin
- 1 vanilla pod
- 500 ml whipping cream
- 3 level tbsp raw cane sugar
- 250 g mixed berries (strawberries, redcurrants and raspberries)
- 1 tbsp lemon juice
- 4 sheets mint (for garnishing)
Instructions
- 1. Soak the gelatin leaves in a bowl of cold water.
- 2. Slice the vanilla pod lengthwise and scrape out the seeds.
- 3. Add the cream, sugar, vanilla pod, and vanilla seeds to a saucepan.
- 4. Heat the mixture until it comes to a brief boil.
- 5. Remove the saucepan from the heat.
- 6. Squeeze the soaked gelatin well and stir it into the hot cream until fully dissolved.
- 7. Let the vanilla cream cool down for about 10 minutes.
- 8. Remove the vanilla pod from the mixture.
- 9. Rinse four small glasses with cold water.
- 10. Pour the vanilla cream into the glasses.
- 11. Place the glasses covered in the refrigerator for at least 4 hours until the panna cotta is set.
- 12. Wash the berries and remove any stems or leaves.
- 13. Cut the berries into small pieces.
- 14. Set aside four tablespoons of the berries to use for garnishing later.
- 15. Puree the remaining berries finely with the lemon juice.
- 16. Optionally press the berry puree through a fine sieve to make it completely smooth.
- 17. Spread the berry puree over the cold panna cotta.
- 18. Place the reserved whole berries on top.
- 19. Garnish the dish with fresh mint leaves before serving.
