🍽️ Crispy Pollack with Lime Caramel and Creamy Mashed Potatoes

Ingredients
- 800 g floury potatoes
- 200 ml milk
- 2 tbsp crème fraîche
- 4 pollack fillets (approx. 140 g each)
- salt
- pepper (from the mill)
- 2 tbsp flour
- 2 eggs
- 80 g breadcrumbs
- ghee (for frying)
- 2 limes
- 1 tbsp brown sugar
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Steam the potatoes for about 30 minutes until they are cooked through.
- 3. Rinse the fish under running water.
- 4. Pat the fish dry with a kitchen towel.
- 5. Season the fish with salt and pepper.
- 6. Coat the fish in flour.
- 7. Whisk the eggs in a separate bowl.
- 8. Dip the floured fish into the whisked eggs.
- 9. Cover the fish with breadcrumbs.
- 10. Heat oil in a frying pan.
- 11. Fry the fish in the pan.
- 12. Fry each side for 2 to 3 minutes until golden brown.
- 13. Peel the limes thoroughly.
- 14. Cut the fillets out of the limes.
- 15. Catch the lime juice as you do this.
- 16. Squeeze the remaining lime pulp.
- 17. Put the sugar into a small saucepan.
- 18. Caramelize the sugar.
- 19. Deglaze the caramel with the lime juice.
- 20. Add the lime fillets to the sauce.
- 21. Remove the saucepan from the heat.
- 22. Peel the cooked potatoes.
- 23. Press the potatoes through a potato ricer.
- 24. Heat the milk.
- 25. Mix the potatoes with the hot milk.
- 26. Mix the mixture with crème fraîche.
- 27. Season the mash with salt and pepper.
- 28. Plate the mashed potatoes.
- 29. Place the fried pollack on top.
- 30. Add the lime fillets as a topping.
- 31. Serve the dish immediately.
