  2. 2. Steam the potatoes for about 30 minutes until they are cooked through.
  3. 3. Rinse the fish under running water.
  4. 4. Pat the fish dry with a kitchen towel.
  5. 5. Season the fish with salt and pepper.
  6. 6. Coat the fish in flour.
  7. 7. Whisk the eggs in a separate bowl.
  8. 8. Dip the floured fish into the whisked eggs.
  9. 9. Cover the fish with breadcrumbs.
  10. 10. Heat oil in a frying pan.
  11. 11. Fry the fish in the pan.
  12. 12. Fry each side for 2 to 3 minutes until golden brown.
  13. 13. Peel the limes thoroughly.
  14. 14. Cut the fillets out of the limes.
  15. 15. Catch the lime juice as you do this.
  16. 16. Squeeze the remaining lime pulp.
  17. 17. Put the sugar into a small saucepan.
  18. 18. Caramelize the sugar.
  19. 19. Deglaze the caramel with the lime juice.
  20. 20. Add the lime fillets to the sauce.
  21. 21. Remove the saucepan from the heat.
  22. 22. Peel the cooked potatoes.
  23. 23. Press the potatoes through a potato ricer.
  24. 24. Heat the milk.
  25. 25. Mix the potatoes with the hot milk.
  26. 26. Mix the mixture with crème fraîche.
  27. 27. Season the mash with salt and pepper.
  28. 28. Plate the mashed potatoes.
  29. 29. Place the fried pollack on top.
  30. 30. Add the lime fillets as a topping.
  31. 31. Serve the dish immediately.
