🍽️ Crispy Mozzarella Slices with Tomato Relish

Ingredients
- 3 Mozzarella (à 125 g)
- 1 Egg
- 2 tbsp Flour
- 4 tbsp Breadcrumbs
- 2 tbsp Olive oil
- 400 g Cherry tomatoes
- 3 Spring onions
- 2 tbsp Olive oil
- Salt
- Pepper (from the mill)
- 2 tbsp Basil
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes into halves or quarters.
- 3. Trim the green ends off the spring onions.
- 4. Wash the spring onions.
- 5. Slice the spring onions into thin rings.
- 6. Heat olive oil in a pan.
- 7. Add the tomatoes and spring onions to the hot pan.
- 8. Sauté the vegetables for a short time.
- 9. Season the mixture with salt.
- 10. Season the mixture with pepper.
- 11. Stir the fresh basil into the vegetable mixture.
- 12. Beat the egg in a shallow bowl.
- 13. Spread the flour on a plate.
- 14. Spread the breadcrumb crumbs on a separate plate.
- 15. Let the mozzarella drain well.
- 16. Cut the mozzarella into thick slices.
- 17. Coat one mozzarella slice in the flour first.
- 18. Then coat the floured slice in the egg mixture.
- 19. Finally coat the egg-dipped slice in the breadcrumbs.
- 20. Repeat the breading process for all mozzarella slices.
- 21. Heat oil in a heavy pan.
- 22. Fry the breaded slices until golden brown over medium heat.
- 23. Place the finished mozzarella slices on plates.
- 24. Garnish the slices with the sautéed tomato mixture.
