🍳 Crispy Trout with Oat Crust

Ingredients
- 4 trout approx. 250 g each (ready for cooking)
- salt
- pepper (from the mill)
- lime juice
- 4 sprigs cilantro
- 3 tbsp flour
- 2 eggs
- 1 tsp coriander seeds
- 1 dried chili pepper
- 150 g oat flakes
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Rinse the trout inside and out under running water.
- 3. Pat the fish completely dry with a kitchen towel.
- 4. Season the trout inside and out with salt and pepper.
- 5. Drizzle some lime juice over the fish.
- 6. Place one stalk of fresh coriander greens into the belly cavity of each fish.
- 7. Coat the fish in the flour until they are covered all over.
- 8. Dip the fish into the beaten eggs.
- 9. Grind the coriander seeds and the chili pepper finely in a mortar.
- 10. Fold the ground spice mixture into the oat flakes.
- 11. Coat the fish in the oat mixture to bread them.
- 12. Place the breaded fish on a baking tray lined with baking paper.
- 13. Bake the trout in the oven for 25 to 30 minutes until golden brown.
- 14. Turn the fish once during the baking time.
