  2. 2. Rinse the trout inside and out under running water.
  3. 3. Pat the fish completely dry with a kitchen towel.
  4. 4. Season the trout inside and out with salt and pepper.
  5. 5. Drizzle some lime juice over the fish.
  6. 6. Place one stalk of fresh coriander greens into the belly cavity of each fish.
  7. 7. Coat the fish in the flour until they are covered all over.
  8. 8. Dip the fish into the beaten eggs.
  9. 9. Grind the coriander seeds and the chili pepper finely in a mortar.
  10. 10. Fold the ground spice mixture into the oat flakes.
  11. 11. Coat the fish in the oat mixture to bread them.
  12. 12. Place the breaded fish on a baking tray lined with baking paper.
  13. 13. Bake the trout in the oven for 25 to 30 minutes until golden brown.
  14. 14. Turn the fish once during the baking time.
