  2. 2. Remove any tough stems or wilted leaves from the arugula.
  3. 3. Pat the arugula completely dry with a kitchen towel or paper towels.
  4. 4. Finely chop the dry arugula.
  5. 5. Season the mozzarella balls with salt and pepper to taste.
  6. 6. Roll the seasoned mozzarella balls in the finely chopped arugula until they are completely covered on all sides.
  7. 7. Whisk an egg in a separate bowl until it is evenly beaten.
  8. 8. Dip the arugula-coated mozzarella balls into the beaten egg.
  9. 9. Roll the egg-coated balls in breadcrumbs until they are fully covered.
  10. 10. Heat oil in a frying pan to approximately 180 degrees Celsius.
  11. 11. Fry the breaded mozzarella balls in the hot oil for about 4 to 6 minutes until golden brown.
  12. 12. Place the finished balls on paper towels to absorb excess grease.
  13. 13. Serve the warm mozzarella balls immediately.
  14. 14. Serve a tomato sauce on the side for dipping, if desired.
