  1. 1. Preheat a large pan over medium heat and add lard.
  2. 2. Pound each cutlet flat, either with a meat mallet or the bottom of a heavy pan.
  3. 3. Prepare three shallow bowls: one with flour, one with beaten eggs and cream, and one with breadcrumbs.
  4. 4. Season the cutlets with salt and pepper.
  5. 5. Coat the cutlets in the flour and shake off any excess powder.
  6. 6. Dip the floured cutlets completely into the egg and cream mixture.
  7. 7. Gently press the cutlets into the breadcrumbs so they are evenly covered.
  8. 8. Fry the breaded cutlets briefly in the hot lard in the pan until golden brown, about one to two minutes per side.
  9. 9. Place the finished cutlets on kitchen paper to drain the fat.
  10. 10. Serve the cutlets immediately while hot.
