🍽️ Crispy Breaded Veal Cutlets

Ingredients
- 4 veal schnitzels (e.g. from the top round), approx. 120 g each
- 3 tbsp flour
- 2 tbsp heavy cream
- 2 eggs
- 120 g breadcrumbs
- salt
- pepper (from the mill)
- 60 g clarified butter
Instructions
- 1. Preheat a large pan over medium heat and add lard.
- 2. Pound each cutlet flat, either with a meat mallet or the bottom of a heavy pan.
- 3. Prepare three shallow bowls: one with flour, one with beaten eggs and cream, and one with breadcrumbs.
- 4. Season the cutlets with salt and pepper.
- 5. Coat the cutlets in the flour and shake off any excess powder.
- 6. Dip the floured cutlets completely into the egg and cream mixture.
- 7. Gently press the cutlets into the breadcrumbs so they are evenly covered.
- 8. Fry the breaded cutlets briefly in the hot lard in the pan until golden brown, about one to two minutes per side.
- 9. Place the finished cutlets on kitchen paper to drain the fat.
- 10. Serve the cutlets immediately while hot.
