🍽️ Crispy Chicken Skewers with Fresh Tomato Sauce

Ingredients
- 600 g tomatoes
- 1 clove of garlic
- 1 shallot
- olive oil
- 1 tbsp tomato paste
- 100 ml vegetable broth
- salt
- pepper (from the mill)
- 600 g chicken breast fillet (kitchen-ready, skinless)
- 1 egg
- flour (for dredging)
- 120 g breadcrumbs
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Immediately shock the tomatoes with cold water.
- 3. Peel the skin off the tomatoes.
- 4. Quarter the tomatoes and remove the core.
- 5. Dice the tomato flesh into small cubes.
- 6. Peel the shallot and the garlic.
- 7. Finely chop the shallot and garlic.
- 8. Heat 2 tablespoons of oil in a pot.
- 9. Sauté the onion mixture until translucent.
- 10. Add the diced tomatoes and tomato paste.
- 11. Deglaze the mixture with the broth.
- 12. Season the sauce with salt and pepper.
- 13. Simmer the sauce over medium heat for about 10 minutes.
- 14. Rinse the chicken meat under running water.
- 15. Pat the meat dry with a kitchen towel.
- 16. Cut the meat into large chunks.
- 17. Whisk the egg in a bowl.
- 18. Season the egg with salt and pepper.
- 19. Coat the meat pieces in flour first.
- 20. Then dip the meat pieces into the egg.
- 21. Finally, coat the meat pieces in the breadcrumbs.
- 22. Press the coating firmly onto the meat.
- 23. Heat oil in a large frying pan.
- 24. Fry the breaded meat pieces until golden brown.
- 25. Thread the meat pieces onto wooden skewers.
- 26. Serve the skewers with the seasoned tomato sauce.
