  2. 2. Pat the chicken thighs completely dry with kitchen paper.
  3. 3. Loosely beat the eggs in a shallow bowl using a fork.
  4. 4. Mix the breadcrumbs in a second bowl with the sesame seeds.
  5. 5. Add the dried herbs, salt, and cayenne pepper to the breadcrumb mixture and stir well.
  6. 6. Coat the chicken thighs briefly in the flour.
  7. 7. Dip the floured chicken thighs into the beaten eggs.
  8. 8. Coat the egg-dipped chicken thighs in the breadcrumb and sesame mixture.
  9. 9. Press the breading firmly onto the chicken to ensure it sticks well.
  10. 10. Place the breaded chicken thighs on a baking sheet lined with baking paper.
  11. 11. Drizzle the olive oil evenly over the chicken thighs.
  12. 12. Preheat the oven to 175 degrees Celsius conventional heat (or 150 degrees Celsius fan-forced, or gas mark 2).
  13. 13. Bake the chicken thighs for about 35 minutes until crispy and golden brown.
  14. 14. Serve the chicken thighs garnished with fresh lemon wedges.
  15. 15. Serve white bread and leaf salad on the side according to your preference.
