🍽️ Crispy Sesame-Breaded Chicken Thighs

Ingredients
- 4 chicken drumsticks
- 2 eggs
- 80 g breadcrumbs
- 2 tbsp sesame seeds
- 0.5 tsp dried tarragon
- 0.5 tsp dried parsley
- salt
- cayenne pepper
- 3 tbsp spelt flour (à 45 g)
- 2 tbsp olive oil (à 20 g)
- lemon wedges (for garnish)
Instructions
- 1. Rinse the chicken thighs under cold running water.
- 2. Pat the chicken thighs completely dry with kitchen paper.
- 3. Loosely beat the eggs in a shallow bowl using a fork.
- 4. Mix the breadcrumbs in a second bowl with the sesame seeds.
- 5. Add the dried herbs, salt, and cayenne pepper to the breadcrumb mixture and stir well.
- 6. Coat the chicken thighs briefly in the flour.
- 7. Dip the floured chicken thighs into the beaten eggs.
- 8. Coat the egg-dipped chicken thighs in the breadcrumb and sesame mixture.
- 9. Press the breading firmly onto the chicken to ensure it sticks well.
- 10. Place the breaded chicken thighs on a baking sheet lined with baking paper.
- 11. Drizzle the olive oil evenly over the chicken thighs.
- 12. Preheat the oven to 175 degrees Celsius conventional heat (or 150 degrees Celsius fan-forced, or gas mark 2).
- 13. Bake the chicken thighs for about 35 minutes until crispy and golden brown.
- 14. Serve the chicken thighs garnished with fresh lemon wedges.
- 15. Serve white bread and leaf salad on the side according to your preference.
