  1. 1. Cut the chicken breast fillets into smaller cutlets using a sharp knife.
  2. 2. Whisk the eggs in a bowl and season them with salt and pepper.
  3. 3. Coat the chicken cutlets in flour first.
  4. 4. Dip the floured cutlets into the egg mixture next.
  5. 5. Finally, cover the cutlets in breadcrumbs and press the coating firmly onto the meat.
  6. 6. Heat plenty of ghee (clarified butter) in a deep pan or deep fryer to 180 degrees Celsius.
  7. 7. Fry the cutlets in the hot fat until golden brown on both sides.
  8. 8. Let the finished cutlets drain on kitchen paper.
  9. 9. Slice the limes into thin rounds.
  10. 10. Slice the chili peppers into thin rings.
  11. 11. Plate the cutlets with the lime slices and chili rings.
  12. 12. Drizzle the cutlets with a little lime juice.
  13. 13. Serve the cutlets immediately.
