  2. 2. Pat the fillets completely dry with a kitchen towel.
  3. 3. Cut the fillets into strips about as thick as your finger.
  4. 4. Season the fish strips with salt and pepper.
  5. 5. Drizzle the fish with some lemon juice.
  6. 6. Beat the eggs in a shallow bowl.
  7. 7. Place the flour on a plate.
  8. 8. Place the breadcrumbs on a second plate.
  9. 9. Mix the breadcrumbs with the herbs.
  10. 10. Coat the fish strips in the flour.
  11. 11. Dip the floured strips into the beaten eggs.
  12. 12. Roll the fish pieces in the herb breadcrumb mixture.
  13. 13. Press the breading firmly so it sticks well.
  14. 14. Heat oil in a non-stick frying pan.
  15. 15. Fry the fish strips on all sides for 4 to 5 minutes until golden brown.
  16. 16. Let the finished fillets drain on kitchen paper.
