Ingredients
- 1 grapefruit
- 1 orange
- 3 mandarins
- 50 g feta
- 30 g mixed herbs (dill, cilantro, mint)
- 1 handful American pistachios (30 g each)
- 1 avocado
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp hot mustard
- salt
- pepper
Instructions
- 1. Peel the grapefruit, the orange, and two of the mandarins. Slice the fruit into thin rounds. Crumble the feta cheese into small pieces. Wash the fresh herbs, shake them dry, and tear the leaves into small pieces by hand.
- 2. Cut the avocado in half, remove the pit and the skin. Cut each avocado half lengthwise into two wedges. Roll the avocado pieces in the chopped pistachios so they are covered all around, and press the nuts on gently.
- 3. Squeeze the juice from the remaining mandarin. Mix the juice with the olive oil, the maple syrup, the mustard, and a pinch of salt and pepper to make a dressing. Place the breaded avocado pieces on the plates and add the prepared fruits and herbs. Finally, drizzle the dressing over the dish.
