🍰 Crunchy Nut and Fig Cake

Ingredients
- 100 g peeled almond kernels
- 100 g hazelnuts
- 100 g walnut kernels
- 150 g dried figs
- 150 g mixed candied fruits
- 150 g powdered sugar
- 100 g honey
- 1 wafer sheet (to line the pan)
- 1/4 tsp cinnamon powder
- 1/4 tsp clove powder
- 1/4 tsp coriander powder
- 1/4 tsp ginger powder
- 0.25 tsp nutmeg
- 2 tbsp flour
- butter (to grease)
- powdered sugar (to dust)
- cinnamon (to dust)
Instructions
- 1. Heat a pan without oil over medium heat.
- 2. Add the almonds and nuts to the hot pan.
- 3. Stir the nuts constantly until they are lightly golden brown and fragrant.
- 4. Remove the pan from the heat and let the nuts cool down completely.
- 5. Roughly chop the cooled nuts with a knife.
- 6. Cut the figs and candied fruits into small cubes.
- 7. Place the cut fruits into a large bowl.
- 8. Add the roughly chopped nuts to the bowl with the fruits.
- 9. Add the spices and mix everything well together.
- 10. Place powdered sugar and honey into a metal bowl.
- 11. Place the metal bowl over a pot with gently simmering water (bain-marie).
- 12. Stir the mixture constantly over low heat until the sugar melts.
- 13. Stop stirring when the mixture forms threads.
- 14. Remove the bowl from the water bath and let the mixture cool down slightly.
- 15. Pour the honey-sugar mixture over the nut and fruit mixture.
- 16. Mix everything thoroughly until everything is well coated.
- 17. Add 1 to 2 tablespoons of flour.
- 18. Stir in the flour until it is evenly distributed.
- 19. Take a shallow baking pan (square or round).
- 20. Grease the pan thinly with butter.
- 21. Line the bottom of the pan with parchment paper or wafer sheets.
- 22. Pour the dough mixture into the prepared pan.
- 23. Smooth the surface with a spoon or spatula.
- 24. Preheat the oven to 150 degrees Celsius.
- 25. Place the pan in the preheated oven.
- 26. Bake the cake for about 30 minutes.
- 27. Remove the cake from the oven and let it cool down completely.
- 28. Lightly dust the finished surface with powdered sugar.
- 29. Dust with a little cinnamon for garnish.
